CPMMERCIAL ITEM DESCRIPTION
ROLLS, BROWN AND SERVE, FRESH
The U.S. Department of Agriculture has authorized the use of this Commercial Item Description in lieu of Type I, Class A and Type III, Class A of Federal Specification EE-R-580.
This Commercial Item Description (CID) covers fresh, brown and serve rolls, packed in commercially acceptable containers, suitable for use by the Federal Government.
Salient characteristics.
The fresh, brown and serve rolls shall conform to the following types and classes as specified in the solicitation, contract, or purchase order.
Types.
Type I – Sandwich rolls
Type II – Parkerhouse rolls
Type III – Sweet rolls
Type IV – Whole wheat rolls
Classes.
Class A – Enriched
Class B – Nonenriched
All types of fresh brown and serve rolls shall be yeast fermented, soft, fully formed, and prebaked to a uniform size and color. Enriched rolls shall contain all of the necessary ingredients to meet the FDA requirements for enrichment.
Fresh sandwich rolls and parkerhouse rolls shall be white and the crust shall have no more than a light brown color. The parkerhouse rolls shall be of “pocketbook” shape (square with a single butterwashed fold). Fresh sweet rolls shall have a slightly sweet flavor, shall be off-white to dark yellow, and the crust shall have no more than a light brown color. Fresh whole wheat rolls shall be prepared from a combination of whole wheat flour and white flour. The whole wheat rolls shall be light brown to brown in color and the crust shall have no more than a typical brown color.
