COMMERCIAL ITEM DESCRIPTION
CAKE, MIX, CHEESE, UNBAKED
The U.S. Department of Agriculture has authorized the use of this commercial item description in preference to, Military Specification MIL-C-43872.
Salient characteristics.
The cheese cake mix shall be prepared from ingredients which comply with the applicable Food and Drug Regulations. If not defined, the appropriate Food Chemicals Codex shall be referenced for purity as appropriate for dry dairy products, dried baker’s cheese, sugars, shortening, stabilizers, emulsifiers, flavors, colors, buffers, salt, leavening agents, and preservatives. Other optional ingredients may be used. Ingredients derived from milk shall be certified as salmonella negative by a plant, government or commercial laboratory and shall be manufactured in a plant approved by the Dairy Grading Section, Dairy Division, U.S. Department of Agriculture. The moisture of the dry mix product shall not exceed 2.0 percent when tested by the Vacuum Drying Method of the Official Methods of Analysis of the Association of Official Analytical Chemists.
The cheese cake mix shall be prepared by combining 302 grams of the mix with 454 milliliters (16 fluid ounces) of reconstituted nonfat dry milk (e.g., 46 grams of nonfat dry milk and 426 milliliters (15 fluid ounces) of water). Place cold milk in bowl. Add filling mix. Blend well with mechanical mixer at low speed for 1 minute, scrape down bowl, and beat for 2 minutes at medium speed. Pour filling mix into a 22.9 cm (9 inch) preformed graham cracker shell. Chill 1 hour. Immediately examine prepared cheese cake for flavor, texture, and consistency. The prepared product, when chilled at least 1 hour, shall be rigid enough to slice cleanly and the filling shall show no evidence of weeping (liquid separation). The color, odor, flavor, and texture shall be characteristic of a nonbaked type cheese cake.
