COMMERCIAL ITEM DESCRIPTION
PIES, CRUST MIX (PREPARED)
The U.S. Department of Agriculture has authorized the use of this Commercial Item Description in preference to Federal Specification N-P-361.
This Commercial Item Description (CID) covers prepared pie crust mix, packed into commercially acceptable containers, suitable for use by the Federal Government.
Salient characteristics.
Pie crust mix shall be prepared from enriched bleached flour, vegetable shortening, and salt. Optional functional ingredients may be added; for example, nonfat dry milk, whey, and dough conditioner (calcium sulfate, dicalcium phosphate, salt, diammonium phosphate, and calcium peroxide). Also, the mix may contain cornstarch, dried corn syrup, mono- and diglycerides, and sodium caseinate. The finished dry mix shall not contain more than 9.0 percent moisture.
When product is prepared in accordance with the labeled directions, it shall bake to a flaky, golden brown crust.
Analytical requirements.
Chemical analyses shall be made in accordance with the following method in the Official Methods of Analysis of the Association of Official Analytical Chemist:
